Growing up in New Hampshire, this is another fall favorite of mine & my family’s! Filling & comforting. Great for a chill night or a lazy Sunday afternoon. I’m sure y’all will love this one!
🛒What you’ll need🛒
3 cans sweet corn
3 cans creamed corn
3 cans evaporated milk
1 cup whole milk
1 package of bacon
1 onion, diced
2 bags of small golden potatoes
1 stick salted butter
Salt
Pepper
Paprika
Onion powder
Garlic powder
Bread (for the side)
🍴How to make it🍴
Cook your bacon in the oven & then cut into pieces. Cut your potatoes into quarters. In a large pot, add butter & onions. Cook till golden brown. Then add potatoes & bacon. Add spices (measure with your ❤️). Mix. Then add canned corn (drained), creamed corn (not drained), evaporated milk, 1 cup whole milk. Combine. Cover and simmer on low heat (so the milk doesn’t burn), stirring occasionally, until potatoes are soft (1-2 hrs).
📝Notes 📝
Keeps in the fridge for 5-6 days
Serve with bread & butter
You can use pre cooked bacon, bacon bites or bacon pieces!
For a cheaper & quicker alternative to cutting potatoes, you can buy 3 cans of diced potatoes (drained) instead!
