This is a great recipe that incorporates all the best vegetables of fall! A quick and durable one that will feed for your family for a week, this recipe is one of my favorites during the fall months 🍁


What you'll need:

  • Quinoa

  • Sweet potatoes

  • Butternut squash

  • Ground turkey

  • Brussel sprouts

  • Rosemary

  • Salt

  • Pepper

  • Poultry seasoning

  • Everything bagel seasoning (optional)

  • Paprika

  • Olive oil


How to make it:

  • Set your oven to 350F

  • In a pot, boil your quinoa (2 cups water per 2 cup quinoa).

  • While quinoa is cooking, peel and dice your vegetables. Put them into a large mixing bowl.

  • Drizzle olive oil onto veggies until they are all evenly coated. Then add fresh Rosemary, salt, pepper, and "everything bagel" seasoning. Mix well, coating all veggies.

  • Then put vegetable on a large cookie sheet. Bake in the oven for 40/45mins.

  • Next, cook your ground turkey. Add poultry seasoning & paprika.

  • Once quinoa, veggies & turkey is finished- layer them into a bowl. Serve immediately.


Notes

  • This recipe can be modified in so am too different ways! For instance, you could omit the meat all together and make it a vegetarian dish or add some bacon for a savory flavor; you could switch up spices & some fruit for a sweeter take (ie. making the vegetables with cinnamon, apples, or cranberries for a festive fall flare); or you could switch the vegetables around/add other fall favorites (such as adding in an acorn squash). It's up to you!

  • If you haven't worked with quinoa before, don't worry, it's easy! You can tell quinoa is done when the "tails" show. It's not as "sticky" or hardens as fast as rice in the fridge, it keeps its integrity super well! Which makes it a great option for meal prepping

This is one of my favorite dinners, especially for weight loss! Easy to make & sooo GOOD.




🛒What you’ll need🛒:


-Chicken breast

-Red onion

-Yellow bell pepper

-Red bell pepper

-Zucchini

-Skewers




For the Marinade (measure all with your ❤️):


-Balsamic

-Dijon mustard

-A little honey

-Just a little bit of olive oil (especially if you’re trying to loose weight)

-Salt & pepper



Cut up veggies & cube chicken breast. Marinade chicken for at least an hour in the sauce (I let mine marinade for 3hrs). Then bake in the oven at 450F for 30 mins (or until chicken is cooked), flipping the kabobs half way though. That’s it! 🥰

Growing up in New Hampshire, this is another fall favorite of mine & my family’s! Filling & comforting. Great for a chill night or a lazy Sunday afternoon. I’m sure y’all will love this one!



🛒What you’ll need🛒


  • 3 cans sweet corn

  • 3 cans creamed corn

  • 3 cans evaporated milk

  • 1 cup whole milk

  • 1 package of bacon

  • 1 onion, diced

  • 2 bags of small golden potatoes

  • 1 stick salted butter

  • Salt

  • Pepper

  • Paprika

  • Onion powder

  • Garlic powder

  • Bread (for the side)



🍴How to make it🍴


Cook your bacon in the oven & then cut into pieces. Cut your potatoes into quarters. In a large pot, add butter & onions. Cook till golden brown. Then add potatoes & bacon. Add spices (measure with your ❤️). Mix. Then add canned corn (drained), creamed corn (not drained), evaporated milk, 1 cup whole milk. Combine. Cover and simmer on low heat (so the milk doesn’t burn), stirring occasionally, until potatoes are soft (1-2 hrs).




📝Notes 📝

  • Keeps in the fridge for 5-6 days

  • Serve with bread & butter

  • You can use pre cooked bacon, bacon bites or bacon pieces!

  • For a cheaper & quicker alternative to cutting potatoes, you can buy 3 cans of diced potatoes (drained) instead!
